There is a little grub screw on the lower end of the piston body with a slotted head. Simply undo that and pull the needle out. It may be a little stiff but it will come out with a bit of persuasion. Make sure the new needles are the correct ones for the age of your car. The thicker head of the needle should be flush with the body of the piston.

Got one out, now how do i get the other needle out when the grub screw is mullered inside the piston? Can I get a second hand/new piston?

Could you try a very small pointed punch to attempt to shock it into moving? Left hand drills bits are also available, which when they start to bite, are designed to undo the item being drilled into. But due to the small size of the grub screw, and the aluminium body of the piston, the latter may result in more damage unfortunately.
I will probably have a good used piston available, if all your other attempts to release the grub screw fail. Let me know if it would be of use to you if you do go down the route of a replacement piston.

Hey Johnnydog I'm gonna have to buy a left handed drillbit as i don't have one, i tried the first option and no joy if the head on the last one is that mullered then it might be more cost effective to get a second hand or new one. I don't mind trying but its get frustrating and expensive just to put the carbs back to a default setting! Anyway great tips, pm me if you have one for sale Regards Matt.
