I have 195/60/15 on one of my mk2's, a bit of a 'snug' fit on the rear arches, but you'll have plenty room on a mk1 with the narrower track. As you say, the 60 series tyre gives a very close rolling circumference to the original 175x13.

The easiest way to start would be to replace the bolt-on part of the hinges with some from a scrap door. As Phil T says, easier with the shelf removed, also disconnect the multi-plugs for the wiper/indicator/lights & ignition switches to allow the steering column to be pulled back inside the car once the rake adjustment clamp & the top bolt in the steering shaft u/j have been removed.
